2 cups shredded sharp cheddar cheese
1 pound shrimp, peeled and de-veined

2 tablespoons chopped cilantro
1 cup thinly sliced scallions
1/2 cup diced celery
1/2 cup diced bell peppers
1 large clove garlic, minced

- 2 tablespoons butter
- 2 tablespoons extra-virgin olive oil
- 4 garlic cloves, minced
- ½ cup dry white wine or broth (Chardonnay or similar)
- ¾ teaspoon kosher salt, or to taste
- ⅛ teaspoon crushed red pepper flakes, or to taste
- Freshly ground black pepper
- 1 ¾ pounds large or extra-large shrimp, shelled
- ⅓ cup chopped parsley
- Freshly squeezed juice of half a lemon
- Cooked pasta or crusty bread

FROTHY LEMONDROP MARTINI
- 2 ounces vodka
- 1 ounce simple syrup
- 1 1/2 tablespoons lemon juice about half a lemon. strained to remove seeds and pulp
- 1 egg white (for the froth)
- extra lemon for garnish and rimming the glass
